Super Immune Boosting Bone Broth

This recipe provides the best gelatinous bone broth.

What you will need:

1 large Crockpot or slow cooker

4-5 Free range chicken carcases with the connective tissue (this is where the gelatin comes in)

4-5 Chopped carrots

2 Sticks of celery, chopped

1 Large onion

1 Whole garlic peeled, smashed

1 Half of a Fennel (many health benefits)

2 Large pieces of ginger (6-12g)

1 Tbsp Apple Cider Vinegar (with the mother)

1 Tsp Celtic or Himalayan pink salt

1 Tsp Black pepper corns

4-5 Litres of clean cold water (quantity will vary on the size of your crockpot)

The Herbs - 6-12g Astragalus (dried) root, 6-12g Echinacea (dried) root, 10g Shiitake mushrooms, 10g Reishi mushrooms, 10g Cordyceps

You can add any other vegetables that need consuming i.e. greens etc.

Optional items:

3 Jujube fruit

Fresh Turmeric (6-12g)

Method:

Place the chicken carcases into your slow cooker

Sprinkle over the 1 tbsp. of Apple cider vinegar

Add the carrots, celery, onion, garlic, fennel and ginger

Fill with water to the top line on your slow cooker

You can put the herbs in little empty teabags or place on the top of the water loose, add the Astragalus, Echinacea, Shiitake, Reishi and Cordyceps.

Sprinkle in the Salt and Black pepper and replace the slow cooker lid

Set the temperature on your slow cooker to low and leave overnight or for at least 12 hours, you can give it all a stir round half way through.

When its ready you can drink a little straight after, you can store some in the fridge and some in the freezer which means that you will always have some available. It will last between 5-7 days in the fridge and the amount in the recipe usually gives bone broth to use for a whole month sometimes longer. Decant and strain the broth from the bones and vegetables into a bowl or jug, allow to cool right down before storing in the fridge or freezer.

To store in the freezer, you can use either a sealed container or pour into ice cube trays (this takes some practice) using a measuring cylinder helps!

A little tip, you will know if you have successfully made a very gelatinous broth if it sets like jelly in the fridge. You can scoop out some using a ladle or spoon and use for a base for making any soup of your liking but if you want to make an immune boosting chicken noodle soup, I have a recipe below.
