Carrot & Coriander Soup

This super immune boosting carrot & coriander soup will not only warm you up but satisfies your tastebuds and provides an abundance of nutrients.

Step 1 - Heat a little oil in a large saucepan and add the onion
Step 2 - Add the chopped carrots, sweet potato, Celery and stir
Step 3 - Add the bone broth, Himalayan or Celtic salt, bring to the boil
If you have no bone broth available, you can add a bag of herbs using 6-12g Astragalus (dried) root, 6-12g Echinacea (dried) root, 10g Shiitake mushrooms, 10g Reishi mushrooms, 10g Cordyceps
Step 4 - Add filtered water if required
Step 5 - Add the Garlic and gently simmer for 15 minutes
Step 6 - Add the fresh coriander and using a hand blender, nutribullet or jug blender, blend until smooth
Top with a dollop of creme fraiche and swirl or use a little single cream to swirl and add some finely chopped coriander to garnish
Voila, super tasty, super healthy and good for your immune system
